This Hummus Zucchini noodles is so delicious!

I love that I can get my serving of veggies and some extra protein in while enjoying a super flavorful meal that is a breeze to pull off.

This Zucchini Noodles is easy. All you need to make this delicious creamy sauce is hummus and water! That’s it! Since we use store-bought hummus, it takes little to no time. If you’ve got some time on your hands, you can always make your own Hummus recipe.

Most of these ingredients are fridge and pantry staples, making it a super easy recipe to prepare it and adjust it to your taste.

Ingredients:

  • zucchini
  • dried tomato
  • pumpkin seeds
  • sunflower seeds
  • vegan feta or vegan Greek style cheese
  • For the Hummus Sauce:
    • hummus or Tahini
    • maple syrup or agave
    • water
    • lemon juice

How to cook this raw vegan zucchini noodles

  1. Spiralize the zucchini, cut them into smaller strands if they are too long and place them in a work bowl.
  2. Bring another bowl, mix all the sauce ingredients together.
  3. Add Feta, sun dried tomato, maple syrup, lemon juice, and hummus sauce to the zucchini bowl.
  4. Then add the Hummus sauce to the zucchini noodles. That’s it!! Enjoy it!!

How to make zucchini noodles?

You can either julienne the zucchini by using a julienne tool or you can spiralize using a spiralizer. I have the julienne tool, cause it’s small and it fits nicely in the utensil drawer. On the other hand, the spiralizer is big, it’s easier and it gives you the perfect noodles.
