Fantastically yummy homemade creamy vegan tomato soup. It takes 20 minutes to make, using fresh tomatoes instead of canned! It makes the soup extra rich in flavor, and it tastes amazing.

Fantastically Simple Tomato Soup Recipe

Making homemade tomato soup from scratch is easier than you think! It takes only 5 minutes to roast the garlic, onion, and peel the tomato. Then let it cook with the rest of the ingredients for 10 minutes, giving you the time to cook something else alongside this amazing side dish!

Ingredients:

  • olive oil
  • tomato fresh or canned
  • garlic
  • onion
  • vegetable broth
  • tomato paste
  • paprika
  • coconut milk
  • salt and pepper

What Tomatoes should I use?

This soup is the best with fresh tomatoes. I love using whole peeled tomatoes. I used about 10 medium size tomatoes (like in the picture below). Just make sure to use ripe and red tomatoes as they pack the best flavor.

You can also used canned tomato, peeled or unpeeled for this recipe but if you want a smoother texture, then use peeled tomatoes.

Quick way to peel the tomatoes

  •  To get the skin peeled easier, start with cutting a shallow X on the bottom of each tomato. Don’t forget this part about peeling the tomatoes because it tastes sweeter and smoother!

  • After you finish cutting all the tomatoes with a shallow X, put them in a large pot of boiling water for 1-2 minutes. Remove and transfer them into a bowl filled with cold water.
  • Now you can peel the skin easily with your fingers.

How to make this recipe

  1. Prepare the fresh tomato by peeling and chopping them as I showed you in the step-by-step pics above.
  2. Bring a pan, add oil and then heat it over medium heat. When hot, add garlic and onion, and cook for about 5 minutes until golden brown.
  3. If you haven’t cut the tomatoes, cut them into small cubes.
  4. Add the vegetable broth and the tomatoes. Bring to boil, and let it cook over medium heat for 10 minutes.
  5. Remove from the heat. Add paprika, tomato paste, salt and pepper to taste, and then the coconut milk.
  6. Mix well with a hand mixer until you have a smooth texture.
  7. Serve in bowls and add coconut yogurt, fresh basil, and crispy bread. Please enjoy!!

Traditional tomato soup usually contains heavy cream, I used coconut milk because it tastes amazing with tomatoes but any other plant-based milk can work too, such as soy or almond milk.

Notes

  • When you're using the hand blender, be careful not to create a mess because the tomatoes squirt easily.
  • Using fresh tomatoes will give the soup a better taste and flavor but you can also use the canned tomatoes.
