Healthy Pumpkin Oatmeal Breakfast Bars

This is my favorite oatmeal bar!

Here’s what you need to know about these soft and dense oatmeal bars that make the perfect breakfast or snack; they’re healthy, easy to make, and taste like sweetened, spiced pumpkin cake. It’s SO yummy!

My boyfriend and I ate the entire pan in half a day!! Yep, he couldn’t help himself. Every time he walked into the kitchen, he brought one piece back to his work desk. Haha!

Ingredients:
  • pumpkin puree
  • coconut oil
  • baking powder
  • cinnamon
  • oats
  • oat milk
  • dates
  • flour, you can either use oat or all-purpose flour
  • peanut butter
  • egg alternative, for the smell (optional)
  • chia seeds
  • salt

How to make this recipe

Step 01

This is a one bowl recipe. Start by whisking up the wet ingredients in the large bowl. That includes pumpkin puree, vegan milk (I like oat milk), peanut butter, dates, egg alternative, and coconut oil.

Next, stir in the dry ingredients including, oats, whatever flour you want, baking powder, chia seeds, salt, cinnamon and pumpkin pie spice (optional).

Then pour the mixture into a nonstick pan, and bake for 35-40 minutes at 180C/350F degrees. Check on the bars after 25 minutes to see if the edges are already turning golden brown. Pro-Tip: Place a piece of foil on top which will allow the center to bake through before the sides burn too fast.

Quick and easy to make

This recipe is really quick and easy to make. All you have to do is cut the dates into small pieces, then mix the ingredients together, and bake! The oven will do the rest. These bars are so delicious when they’re warm or even tasty when they’re cold…it doesn’t matter, you are going to love these healthy bars!

Materials

  • 1/2 cup pumpkin puree
  • 1/4 cup coconut oil, melted
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 1/2 cups oat
  • 1 cup milk
  • 1/3 cup dates, roughly chopped
  • 3/4 cup flour, I used oat flour
  • 1 1/2 tbsp peanut butter
  • 1 tbsp egg alternative
  • 2 tbsp chia seeds

Instructions

  • Preheat the oven to 180C/350F degrees, then spray a baking pan with nonstick spray, or brush it with oil and set aside.
  • Add the wet ingredients all together, and whisk to combine. Then add the remaining ingredients, and stir to combine. Pour the batter into the prepared pan, and cut 2-4 dates pieces in half, and add them on top.
  • Bake for 35-40 minutes or until the edges are golden brown and the center has set. Check on the bars after 25 minutes. If the edges are burning then cover the pan with foil so the center could cook through. Cool them before slicing into bars, then you can store in the refrigerator or serve it. ENJOY!!
