Healthy Raw Pad Thai Noodles Salad

There are no better ways to have your veggie-filled lunch than with one of my favorite cuisines and this tasty raw pad Thai zucchini noodles!

I love vegan pad Thai noodles but I have been listening more to my body and my body wants more raw food lately!! So I have been trying to figure out how to make my favorite recipes raw, quick, and easy to cook.

This easy Healthy Raw Pad Thai noodles is packed with veggies, mixed with a creamy peanut butter sauce, and it takes only 15 minutes to make!

Ingredients:

  • carrots
  • zucchini
  • red cabbage
  • chopped cilantro
  • bean sprouts
  • peanut butter
  • Sriracha
  • soy sauce
  • lime wedges
  • peanuts

How to Make this easy recipe

  1. In a small bowl or jar, combine the peanut butter, Sriracha, soy sauce and water. Add salt if needed
  2. Take your zucchini and carrots and run through the the spiralizer, then add them to a large bowl with chopped red cabbage, cilantro and bean sprouts!
  3. Mix all the veggies together, pour the sauce over the veggies and mix well to combine. Be careful not to overmix as the zucchini noodles will release water and thin out the sauce the more you mix. I prefer to add the sauce over my plate.
  4. Top with some chopped peanuts and more cilantro to serve. Enjoy!

Materials

  • 3 medium carrots
  • 3 medium zucchini or yellow squash
  • 1 cup chopped red cabbage
  • ½ cup chopped cilantro
  • ½ cup bean sprouts

Spicy Peanut Butter Sauce

  • 4 tbsp sugar free peanut butter
  • 1 tbsp Sriracha or chili paste
  • 3 tbsp soy sauce
  • 3-4 tbsp water
  • salt optional

To Serve

  • lime wedges
  • peanuts
  • more cilantro
