Lentil Vegan Kefta

This Lentil Vegan Kefta recipe is vegan, grain-free, and nut-free! It’s high in protein and low in calories. It makes a great meal!

Vegan Kefta made with lentils!

Kefta is ground beef or lamb mixed with ingredients like fresh herbs, onions, ground cumin and sweet paprika, which are often used in Moroccan cuisine. Moroccans often grill it over charcoal, but it’s very versatile: You can thread kefta onto skewers, or shape it as a patty to fill a sandwich,as done here, or even use it as a stuffing for dumplings.

These plant-based Kefta are yummy with a wonderful chewy meaty texture, not too spicy, baked, and perfect with Greek yogurt or any sauce you desire!

No one true recipe for kefta exists, which is why I feel perfectly justified in generating my own take: Lentil Kefta.

Ingredients:
  • lentils
  • carrots
  • onion
  • fresh cilantro
  • mint
  • garlic
  • flaxseed
  • cumin
  • smoked paprika
  • coriander
  • olive oil
  • cinnamon
  • coconut flour
  • salt and pepper

How to Make this recipe

  • First, cook the lentils in a saucepan with enough water to cover the lentils by at least 2.5cm (1 inch). Bring to a boil over high heat and then let them simmer for 15 minutes. make sure the lentils are soft but still have a bit of bite, and definitely not falling apart.
  • Wash the lentils under cold water to stop further cooking and drain them. Place the lentils in a food processor.
  • Then add all the ingredients to the food processor except the coconut flour.
  • Mix all until you have left a finely chopped mixture. Make sure to scrape the sides and bottom of the food processor bowl several times so that the mixture is evenly mixed.
  • All you have to do now is adding the coconut flour to the mixture and mix it together.
  • Give the mixture a tiny taste. Based on the flavor you’re aiming for, you can add more salt or pepper, or even more spices.
  • Shape the Kefta in the shape you desire and preheat the oven to 190C (375F) and lightly oil or spray the baking sheet.
  • Place them on the baking sheet and make sure there’s enough space 2.5cm (1inch) apart.
  • Bake for 30-35 minutes until golden brown and they look somewhat dry.
  • Serve warm or cold, with flatbread, as part of a wrap or as a snack! Enjoy!!
