Orange Cauliflower Rice

What is Orange cauliflower…

Orange Cauliflower is an alternative for orange chicken. Cauliflower is all the rage these days, and for a really good reason. It makes a great alternative for chicken, and when prepared correctly is just amazing.

Orange chicken uses a sweet, spicy and thick orange sauce. In this recipe, instead of using chicken, I used cauliflower. It’s healthy, and it tastes amazing!! I baked the cauliflower for a healthier version but of course you can use the air fryer or even a pan to fry them.

Ingredients:

  • For the crispy cauliflower:
    • cauliflower
    • garlic powder
    • black pepper
    • all-purpose flour
    • water
    • breadcrumbs
  • Orange sauce:
    • orange juice, fresh squeezed preferred
    • soy sauce
    • rice vinegar
    • hot pepper or Sriracha sauce
    • ginger, dried or fresh
    • water
    • cornstarch
  • For Serving:
    • rice, brown or white
    • Sriracha
    • sesame seeds, black or white

How to make this recipe

  1. First thing first, preheat the oven to 180C/ 350F, line a large baking sheet. I use reusable baking sheets since it’s better for the environment.
  2. Wash and cut the flour into a medium sized pieces.
  3. Place the breadcrumbs in a medium sized bowl or plate. In another bowl add water, flour, black pepper, and garlic powder. Whisk until well combined.
  4. Add the Cauliflower to the wet batter, and toss to coat all the pieces well.
  5. Take one by one and tap the extra dripping batter off. Roll in the breadcrumbs to coat. Repeat for all the pieces and make sure they’re not touching when you place them on the baking sheet so they don’t stick together as they bake.
  6. Bake for 25-30 minutes until they’re golden and crispy.
  7. While the cauliflower pieces are baking, prepare the orange sauce and the rice.
  8. In a large pan, add orange juice, soy sauce, rice vinegar, sesame oil, Sriracha sauce or hot pepper, and ginger. Bring to boil and cook for two minutes.
  9. Mix the cornstarch with water in small bowl to combine, then add to the sauce to thicken. Keep the pan on medium heat until the sauce thickens.
  10. Once the cauliflower are done, add them to the pan, make sure the pan is big enough in order to fit the cauliflower pieces. Mix together to coat.
  11. Serve it with rice, sesame and Sriracha or whatever sauce you like, and enjoy this delicious meal!!

How to make this recipe zero waste

When you cut the cauliflower, don’t throw out the leaves, instead you can bake them and you’ll have a high fiber, low carb and sugar free crispy, green leafy chips!

They’re actually really tasty when roasted until crispy with a little olive oil, salt and pepper. The stalks taste a bit like cauliflower, the leafy part tastes kind of like crispy kale. Really Yummy snacks and less waste!

Using Tofu instead of Cauliflower

You can also use tofu with the same technique. It’s quick and easy to make it with this recipe, and it’s perfect for a tasty vegan and gluten free dinner/lunch.

To bake the tofu, all you need to do is to cut the tofu into medium sized cubes, add olive oil, and coat them with cornstarch. Then place them on a baking sheet, and make sure there’s enough room between each piece so they don’t stick together, and then bake for 20-30 minutes, flipping half way through to get the crispness on each side.

Can I use an air fryer instead of the oven?

Yes! Air fryers are awesome! They cook food so fast, and give them a bit of extra crunch and crispiness. But if you don’t have an air fryer it’s OK, as you can bake them and still have the same results.
