Peanut Butter Pumpkin African Stew

This Peanut Butter Pumpkin Stew is seriously delicious!!! This rich and creamy peanut stew is flavorful, super comforting. You’re going to love this flavorful stew!

What is African Stew?

Peanut stews are common in West African countries. Some versions of peanut stew are soups, others are thick stew served with rice, couscous or with delicious bread. You will find both vegetarian and meat versions, the vegetarian version is more popular because meat is quite expensive.

African Stew usually contains peanut butter or peanut paste. While peanut butter might sound weird and unusual ingredient in a stew, but trust me it blends effortlessly with the spices and it gives that creamy richness you are going to love!

I really love buying organic and natural peanut butter, it’s made with just peanuts and sea salt, no added oils or sugar.

  • red onion
  • zucchini
  • garlic
  • red pepper
  • ginger
  • curry powder
  • cumin
  • vegetable broth
  • cayenne pepper
  • pumpkin
  • peanut butter
  • chili optional
  • salt and pepper
  • olive oil
  • rice

How To Make This Recipe

  1.  Bring a large sized pan, peel and grate the ginger, mince the garlic and dice the onions. Saute the onion, garlic, ginger with the olive oil over medium heat for 2-3 minutes
  2. Then cut the pumpkin, red pepper into medium sized pieces, and add them to the pan. Start by adding the spices, cumin, curry powder, cayenne pepper and chili and saute for 5 minutes.
  3. Add the vegetable broth and peanut butter to the pot, stir until the peanut butter has mostly dissolved into the broth. YUMMY!
  4. Place the lid on the pot and let it boil for 15-20 minutes until the pumpkin is very soft.
  5. While the soup is simmering, prepare the rice in a different pot.
  6. If you want to thicken the stew, you can smash a couple of pieces of pumpkin against the side of the pot or you can add more peanut butter (who can say no to that?)
  7. Serve it with roasted peanuts, salt, fresh cilantro and Sriracha if you want.

Substitute for Peanut Butter

If you’re allergic to peanuts and you’re entirely nut-free. the best substitute would be sunflower seed butter, though it’s hard to find it everywhere and it will change the taste somewhat.

If you have only peanut allergy but you can still eat other nuts, you can use cashew butter or almond butter. I really love cashew butter it tastes incredibly good!

Materials

  • 1 medium Red onion
  • 1 big Zucchini
  • 2 cloves garlic
  • 1 red pepper
  • 1/2 tsp fresh minced ginger
  • 1 tsp Cumin
  • 1 tsp Curry powder
  • 500 ml Vegetable broth
  • 1/2 tsp Cayenne pepper
  • 1/2 Small pumpkin
  • 2 tbsp Peanut butter
  • 1 Small pickled chili (optional)
  • 4 cup Brown or white rice

Instructions

  • Bring a large-sized pan, Peel, and grate the ginger using a small holed cheese grater. Mince the garlic, and dice the onion. Sauté the onion, ginger, and garlic with the olive oil over medium heat for 2-3 minutes, or until the onion becomes soft
  • While the onion, ginger, and garlic are sautéing, cut the pumpkin, red pepper into medium-small sized pieces. Add the pumpkin, red pepper, cumin, curry powder, cayenne pepper, and chili pepper if you want it spicy. sauté for 5 mins.
  • Add the vegetable broth and peanut butter to the pot. Stir until the peanut butter has mostly dissolved into the broth.
  • Place a lid on the pot and let it boil for 15 minutes or until the pumpkin is very soft.
  • While the soup is simmering, prepare the rice in a different pot.
  • If you want to thicken the stew you can smash the pumpkin against the side of the pot. or add more peanut butter if you like it sweeter.
  • For serving add roasted peanuts, salt, fresh cilantro, and Sriracha sauce, if desired.
