Why Raw Lasagne?

Raw Vegan Lasagne is healthy, refreshing, and extremely delicious. It’s also super satiating, even without the baked pasta layer. It’s full of flavors and textures!

The absolute top of the pile raw food classic, raw vegan lasagne is always a crowd pleaser. It’s got multiple layers, so it’s going to be a dish that you create for special occasions. That being said, regular lasagne does take quite some preparation time too, so it’s not that far removed from it’s cooked inspiration.

Whether you wanna try raw vegan recipes for health reasons, or just out of curiosity, I can guarantee you’ll love this recipe!

I love preparing raw vegan meals because it is always such a fun and creative time in the kitchen. These kind of recipes are gorgeous and impressing, and have so much potential!

Ingredients:

  • zucchini
  • chickpeas
  • soaked almonds
  • lemon
  • garlic
  • nutritional yeast
  • tahini
  • avocado
  • basil, spinach or arugula
  • sun-dried tomato
  • cherry tomatoes
  • fresh basil
  • olive oil
  • salt and pepper

How to make this recipe

You have 3 different delicious layers to prepare. Each of them are really simple, because all you have to do is put everything in the blender or food processor, until it’s smooth.

  • The pesto layer is made with avocado and fresh herbs, with some garlic, lemon juice, and nutritional yeast.
  • The Hummus layer is made with chickpeas, soaked almonds, lemon, tahini, nutritional yeast, salt and pepper.
  • The Tomato layer you use sun dried tomatoes, cherry tomatoes, fresh basil, garlic, olive oil, salt and pepper to taste.
  • Once your sauces are ready, you cut the zucchini noodles using a vegetable peeler, or simply a good knife. You can keep them long, or cut them in half for smaller pieces.
  • Now all you do is layer the zucchini noodles and the different sauces.(look the pictures bellow)
  • Prepare this lasagne in a casserole dish, then slice and serve like the traditional lasagne, or if you want to make sure it looks pretty, then prepare each serving individually on a plate.
  • Serve it with your favorite nuts, seeds, herbs,or vegan Parmesan. Enjoy!

Materials

Zucchini noodles

  • 500 g zucchini

Hummus sauce

  • ½ cup chickpeas

To serve

  • pine nuts
  • raw vegan Parmesan
  • basil leaves
  • pumpkin seeds

Instructions

Zucchini noodles

  • Now all you do is layer the zucchini noodles and the different sauces.
