What is Zucchini noodles?

Zucchini noodles, also known as “zoodles“ are the perfect gluten-free, zucchini pasta. Just because you’ve decided to ditch wheat-based spaghetti doesn’t mean you really have to give up pasta.

Raw vegan pasta noodles, are so refreshing and always the ones that leave me feeling refreshed and at my best. And they are perfect for the warmer spring and summer months!

Zucchini pasta are so healthy, they’re extremely low in calories, low in carbohydrates, gluten-free and quick to make.

Can I eat it raw?

Absolutely!! Eating Zucchini Noodles raw is the easiest and quickest way to eat them. You can also cook them lightly and they will taste delicious too, but don’t over cook them.You can also eat them warm or cold.

Ingredients:
  • zucchini
  • carrots
  • green peas
  • avocado
  • cucumber
  • tahini
  • lemon juice
  • garlic
  • water
  • basil
  • salt and pepper to taste

How to make Zucchini Noodles

You can either julienne the zucchini by using a julienne tool or you can spiralize using a spiralizer. I have the julienne tool, cause it’s small and it fits nicely in the utensil drawer. On the other hand, the spiralizer is big, it’s easier and it gives you the perfect noodles.

How to Make the sauce

  1. It’s pretty easy, peel the cucumber and slice it into small pieces
  2. Then add the avocado, cucumber, garlic, basil, lemon juice, salt and pepper to a blender and blend until creamy.
  3. That’s it, this sauce is really easy and quick to make! Enjoy!!

Materials

  • 3 medium zucchini
  • 2 large carrots
  • fresh green peas

Avocado Cucumber Sauce

  • 1 avocado
  • 1 medium cucumber
  • 2 tbsp lemon juice
  • 2 tbsp tahini
  • 1 clove garlic
  • ½ cup /100ml water
  • a handful of basil
  • salt and pepper to taste

Instructions

For the zucchini noodles

  • Prepare your zucchini noodles spiralized or julienne style.

Cucumber Avocado Sauce

  • Place all the ingredients into a food blender/processor and process until creamy, stopping every so often to scrape the sides as needed to mix all together well. Taste for flavor adding anything extra you might like.
  • After the sauce is done, add the sauce to zucchini noodles. Serve it with peanuts, peas shoots, and lemon wedges. Enjoy!!
