The Best Sushi Burrito with Crispy Tofu

I’m not sure this is for everyone, but it has become one of my favorite lunches!! This Sushi Burrito with Crispy Tofu Teriyaki is packed with full healthy veggies and it’s fully customizable! Feel free to adapt it as you like, swap out these veggies for what you already have on hand, like cucumber, cabbage, radishes. You could even swap out the rice for quinoa or cauliflower rice. This is one of my favorite healthy lunch recipes, especially when I have leftover rice.

Ingredients:
  • sushi rice
  • date sugar/sugar or agave syrup
  • nori sheets
  • rice vinegar
  • lettuce or spinach
  • avocado
  • carrot
  • sesame seed
  • vegan chipotle mayonnaise
  • red beet
  • green bell pepper
  • teriyaki sauce
  • tofu

The trick to making this fusion burrito is balance. Mexican flavors are robust while Japanese flavors tend to be more subtle. Finding a middle road where both cuisines shine is the trick to creating the perfect sushi burrito.

I limit my Mexican ingredients to one or two. In this crispy tofu sushi burrito I use vegan chipotle mayonnaise and a touch of cayenne to bring in a little smoke and subtle spice.

How to make this recipe

How to make the sushi rice
  1. Wash the sushi rice until the water runs clear. I wash and rinse mine at least 5 times.
  2. Add the washed rice to a medium saucepan – make sure it has a lid- and add 1 and ¼ cups of cold water. Over low to medium heat bring the water up to a boil before turning the heat to low, popping on the saucepan lid, and cooking the water all the way down. When the water has absorbed, remove the rice from the heat and allow it to sit in the pot with the lid still on for 15 minutes.
  3. Meanwhile, combine the vinegar, sugar and salt in a small bowl and stir until the salt and sugar dissolves.
  4. After 15 minutes, gently transfer the rice to a glass or wooden bowl and, using a wooden spoon, carefully fold through the vinegar mixture. Cover the rice with a clean cloth and set it aside until it reaches room temperature.
How to make the crispy tofu teriyaki
  1. Preheat the oven to 400° and line a baking sheet with parchment paper.
  2. Place the tofu into a medium bowl and add the soy sauce, agave syrup and garlic powder. Toss to coat the tofu.
  3. Arrange the tofu pieces in a single layer on the baking sheet.
  4. Bake for about 30 minutes, turning halfway through, until browned and crispy.
How to make sushi burrito
  1. Bring one piece of nori sheet or start by attaching two pieces of nori sheets together, by wetting one edge with water, keeping the rough sides up.(If you want a big burrito).
  2. Then start filling! spread the seasoned room temperature rice out as evenly possible. I like then adding Sriracha or Chipotle mayonnaise. Keep in mind, it’s harder to dip the sushi burrito in a sauce, so I put the flavorful sauce inside.
  3. Then start filling with your favorite veggies! After you’re done filling it, start rolling, wetting the last inch of nori with water to seal. Let it sit, and then cut it in half or pack it up with wrapping paper and then foil.
  4. Enjoy it!!
