Zucchini Chickpea Fritters

These are the yummiest and fastest zucchini fritter you can make!

They’re very simple, fluffy, and filled with protein-rich chickpeas. You can also replace the chickpeas with corn or any protein source you like.

Serve these yummy fritters with hummus or your favorite sauce. I used Simply cream cheese, it’s so tasty!You’ll want to make an extra batch for dinner because they’re really simple and tasty!

One more thing about these tasty fritters is that you can add more or less jalapeno to your liking or any other spices, it’s hard to go wrong!

Ingredients + Substitutions

  • All-purpose of flour
  • zucchini
  • chickpeas, or you can use corn
  • garlic
  • scallions, or you can use green onions
  • parsley
  • olive oil, you can also use whatever oil you wish
  • jalapeno pepper
  • chia flax egg or egg replacer optional but it adds a delicious flavor
  • oat milk, of course you can replace it with any nut milk you desire such as soy, almond or rice milk
  • lime or lemon juice

How to make the best zucchini fritters

  1. Bring a big bowl, start shredding zucchini and toss it in the bowl. Add pinch of salt to the zucchini and wait between 5 to 10 minutes so it can drains the excess liquid.
  2. Bring a clean cheese cloth or dish towel, squeeze the zucchini until there’s no liquid squeezing out of it.
  3. Mix the batter, Add the flour, milk and olive oil. Then bring the zucchini, jalapeno pepper cut in small pieces, minced garlic, parsley and scallions also cut in small pieces. Add lemon or lime juice as much as you like it to be sour, but I added 1 tbsp. Mix all together and start forming the patties. If it still really sticky add extra flour.
  4. Heat up a pan to medium heat and start placing the patties or use a big spoon to form them.
  5. Cook on a medium heat until it turns gold brown. Yuummy I’m sure it looks really good right now!!
  6. Serve the fritters with rice, potatoes and your favorite sauce! I used the rice that I cooked the day before. but you can replace the rice or the potatoes with salad or whatever you’re craving!

Materials

  • 1 cup /130g all-purpose flour
  • 1 big zucchini
  • 265 g can chickpeas
  • 3 cloves garlic
  • 3 scallions diced
  • cup parsley
  • 2 tbsp olive oil
  • ½ jalapeño pepper finely chopped
  • 1 tsp egg replacer or chia flax egg optional
  • ½ cup oat milk or any nut milk
  • 1 tbsp lime or lemon juice

Instructions

  • Bring a big bowl, add the shredded zucchini and add a pinch of salt and leave for 10 minutes.
  • Bring a cheese cloth or a clean dish towel, and squeeze the zucchini and drains the excess liquid.
  • Mix the batter, mix the flour, milk, and olive oil. Then add the grated zucchini, jalapeno,minced garlic, parsley, and scallions. Sprinkle with lime or lemon juice. Mix all together and start forming the patties.
  • Heat up a pan to medium heat and place the patties or use big spoons to from the patties and place them on the pan.
  • Serve the fritters with rice, potatoes and your favorite sauce. Enjoy!!!
